When I took over this restaurant in 2005, a lot of my customers were telling me that they would like to have something Halal, as 80% of my customers are Muslim. The response I have got is tremendous, and all our customers are very happy.
Our general process is the same, the key differences [in the restaurant procedure] are that before anybody goes to work in Halal, if they have been working in any other areas, they must wash their hands thoroughly. They must put on new aprons (green in colour) and new gloves (also green in colour.) Only then can they enter the Halal area.
