The only meat that McDonald’s uses in its McNuggets, McChicken Premiere and McChicken Sandwich is carefully deboned chicken breast meat. The other ingredients in the sandwiches include either a focaccia bun, salsa sauce, lettuce and sour cream & chive sauce (McChicken Premiere) or a quarter bun, sandwich sauce and lettuce (McChicken Sandwich). The condiment in the McChicken Sandwich is actually a sandwich sauce, which may be why you cannot find another mayonnaise that tastes the same. The ingredients for the Sandwich Sauce are water, vegetable oil, sugar, spirit vinegar, modified maize starch, egg yolk, stabiliser E415 (xanthan gum), lemon juice, salt, mustard seed, preservative E202 (potassium sorbate), onion concentrate (onion extractives (96 percent), glycerides, soya lecithin, lactic acid), garlic powder, white pepper, colour (curcumin) and spice extract.McDonald’s does use Hellmann’s Light Mayonnaise in some sandwiches.

However I was struck by the total lack of substance, taste and texture in the bun. What do you guys make them out of? I'm sure it's more than hot air and cotton wool! McDonald’s believes that most of its customers enjoy its buns. As such, there are currently no plans to change the ingredients of the buns. For your information, the ingredients for the McChicken sandwich bun is: Flour, water, sugar, yeast, vegetable oil, salt, emulsifier E472(e), soya flour, sesame seeds, preservative: calcium propionate (E282) and flour treatment agent: ascorbic acid (E300).

If you would like your burger without lettuce then simply ask a member of staff when you order, though this may take a little longer.
