All the homemade burger recipes I've seen use something to make the burger hold together. When you say it contains 'only' meat, are you ignoring preservatives, additives, bonding agents? If the burger is only meat and nothing else at all, why doesn't it fall apart?
-
The beef patties used by McDonald’s are 100 percent beef - no bonding agents, preservatives or additives. Once the patties are made, they are frozen and dispatched to the restaurants. -
McDonald’s burgers are made from 100 percent beef taken from the forequarter and flank of cattle. These quality cuts are then shaped into the individual patties using high pressure. Once the patty has been made, it is frozen and dispatched to the restaurants. Then they get seasoned with salt and pepper. So, no additives, no binders and no egg added – just beef and a little salt and pepper after cooking.

What are these? Delicious Digg Reddit Facebook StumbleUpon - 70. why is a lower grade beef used in your burgers rather than a hgher grade one
-
McDonald’s would dispute that its beef is of a lower quality. 100 percent beef means that nothing other than whole cuts of the forequarter and flank (the front shoulders and sides) are used in McDonald’s burgers. McDonald’s uses the forequarter and flank portions of the cattle for its burgers and some of the UK’s leading supermarkets will use the rear of the same animal to supply their steaks, keeping wastage to a minimum.
