You will be happy to know that the Filet-o-Fish is made from actual fish. McDonald's uses Hoki fish which is a more ecologically sustainable alternative to cod. This is sourced through Marine Stewardship Council certified fisheries, and comes from the seas around New Zealand. (September 2007) NOVEMBER 07 UPDATE: From mid November 2007, McDonald's Filet-o-Fish will be prepared using Alaskan Pollock fish, which is sourced from Marine Stewardship Council certified fisheries. Fish Fingers will continue to be made from Hoki, also sourced from Marine Stewardship Council certified fisheries.

17. Does McDonaldss still use Hoki fish in your fillet-of-fish burgers? Some muslims and all jewish people can't eat this so it would seem better for you if you put another type of fish in your burgers.
Yes, the fish used in the Fillet-O-Fish and Fish Fingers is Hoki. None of the items on the menu at McDonald's are certified as Kosher or Halal. The company currently does not have the correct infrastructure to guarantee the specific requirements that both Halal and Kosher food require, although McDonald's have recently trialled a limited Halal menu in its Southall restaurant. 18. I was eating a fillet o fish and then someone told me that this is actually made from man eating octapus meat. Ofcouse I dont want to get eat or eaten from inside so I spat it out. Could you tell me if this is true. If so why is it called fillet o fish and not an octapus burger or something.
No, this is not true. A Filet-o-Fish contains: crispy coated fish portion (McDonald's is now using Hoki fish to protect depleting cod stocks), a regular bun, half a slice of cheddar cheese (processed) and tartare sauce. McDonald’s is sorry for any inconvenience that this may have caused you. The Filet-o-Fish is now made from Hoki fish and has been for just over a year, to protect rapidly declining cod stocks. McDonald’s does not use haddock, again due to rapidly declining stocks. The Hoki is sourced from sustainable fisheries in New Zealand, all of which are certified by the Marine Stewardship Council. NOVEMBER 07 UPDATE: From mid November 2007, McDonald's Filet-o-Fish will be prepared using Alaskan Pollock fish, which is sourced from Marine Stewardship Council certified fisheries. Here’s a list of ingredients of the cheese slice: Vegetarian cheddar cheese (55%), water, butter, whey powder, milk proteins, natural cheese, flavouring, emulsifying salts (E331 trisodium citrate, E450 diphosphates, E452 polyphosphates), salt, preservative (E200 sorbic acid), colour (E160a natural carotenes, E160c paprika extract). 29. Your filet o fish now uses hoki. Could you explain a bit more about what kind of fish hoki is?
Hoki (Macruronus Novaezealandiae) is found throughout New Zealand waters. The main catching grounds are off the West Coast of the South Island. Most Hoki are about 60 -100cm long and have just a few bones. the flesh is white, delicate and moist. It is also known as blue hake, blue grenadier, whiting and whipstead. The decision to move to Hoki from Cod was made based on the need to find sustainable fish stocks that don’t compromise taste.

The sauce used in the Filet-o-Fish is a tartare sauce. The ingredients of which include: Water, vegetable oil, gherkins onion, free range egg yolk, E1422 modified maize starch, sugar, spirit vinegar, salt, E260 acetic acid, stabiliser (E415 xanthan gum), mustard flour (contains mustard), capers, preservative (E202 potassium sorbate), natural dill relish extract and parsley.
