If burgers are being placed in the microwave at your local restaurant then this is not an approved procedure; please contact the Customer Services team on 08705 244622 so that the matter can be investigated fully. The microwaves in McDonald's restaurants should only be used to make porridge, and heat the pancakes and some of the Deli sandwich fillings. (June 2007)

McDonald's rules are clear that once sandwiches or burgers are prepared, they must be sold within ten minutes otherwise they are disposed of.

No matter what McDonald's menu item you order, if it should be served hot, then that's how you should receive it. If you feel that any of the food you receive is not hot please let the restaurant manager know.

The smaller patties (burgers) do not need draining as this would make the meat dry. On the larger patties, such as the Quarter Pounder, these are lightly drained to ensure that there are no excess juices when served. (June 2007)

As you use the same grills to cook the beefburgers as you do the breakfast sausage burgers, are they cleaned before the menu changes at 10:30 so that there's no risk of cross contamination of sausage juices onto beefburgers? This would give pork-dodgers peace of mind.

Although the same grills are used for cooking breakfast and the main menu, special precautions are taken to avoid issues of meat cross contamination. The grills are cleaned down between cooking pork products and beef products and separate colour-coded cooking and serving utensils are used for the preparation of different foods.

McDonald’s food is made to be enjoyed hot and fresh at the time of serving in the restaurant. It is not intended to be frozen and then reheated. This could lead to food safety issues, as well as drastically reducing the food quality and taste.

It depends on what you mean by fresh? Whenever possible, McDonald’s will use fresh ingredients, for example, the fruit and salad ingredients. However, some menu items –including beef, chicken, fish and the French Fries – are frozen to ensure that these ingredients are at their best when they reach the restaurant. Once prepared, there is a strict holding time for food to ensure that it remains fresh. The holding time for each product varies depending on the type of food. For example, a burger or sandwich is held for ten minutes and French Fries are held for five minutes, whereas the holding time for a salad will be up to eight hours in the fridge.

McDonald’s tries to use fresh ingredients wherever possible. In the case of vegetables, the Iceberg lettuce and some of the onions are fresh. The dill pickle slices, by the very fact that they are pickled, are not. The salad leaves are pre-packed in bags and bought in to use as a base for the salads. Depending on the salad you choose from the menu the cheese, bacon, tomatoes, chicken or other ingredients are added in the McDonald’s kitchen to make up each individual salad. As a result, each salad is freshly prepared. The sauces are not freshly made but are very similar to the sauces you would buy in the supermarket. McDonald’s hot food is freshly prepared and cooked. Once sandwiches are prepared, they are kept in a heated area between the front counter and the kitchen to ensure that they remain hot and fresh. They must be sold within ten minutes, otherwise they are disposed of. McDonald's uses a timecard system to help manage this. McDonald's Fries must be sold within five minutes of being cooked, and the salads also have a limited holding time to keep them fresh.

Yes, the fish is cooked in its own oil, in its own dedicated fryer. When it comes to filtering oil, McDonald’s has two different types of filtering processes - although the company does not maintain a central record of the processes used in each restaurant. One process is self-filtering where oil will not be mixed from one fryer to another. The second filtering process uses the same unit across all fryers but the fryers are filtered in a specific order. So the French Fries fryer is filtered first, followed by the Veggie Deluxe fryer, the Apple Pies fryer, the chicken fryer and then the Filet-o-Fish fryer. The machine is thoroughly cleaned after every filtering session.
