To make the best French Fries, potato farmers need to grow specific potato varieties. In the UK there are three varieties grown to make McDonald's fries – Pentland Dell, Russet Burbank and Shepody. Pentland Dell is a variety that has been grown in the UK for many years and is not used exclusively for McDonald's French Fries. The other two varieties are only preferred for McDonald's fries. So that there are sufficient potatoes for their French Fries, the potato farmers are offered contracts to grow the potatoes and therefore they do not have to gamble on their crop, in fact they know that the sale of their yield is guaranteed before they start growing that season’s crop.

The 'French' in French Fries refer to the slim cut of the potato and not directly to the country of its origin (France). Chips usually refer to the bigger- cut style of fried potato.

This is something that McDonald’s is currently considering. In certain restaurants, salt-free Fries are being trialled, and once McDonald’s has gathered the results of this trial, a decision will be made. If you would like your Fries without salt, simply request this when placing your order. McDonald’s are also actively reducing the salt content in many of their products.

McDonald’s has not stopped salting its French Fries. Some restaurants have been trialling salt-free Fries, that is, giving customers the option to salt their own French Fries.

The French Fries are indeed gluten- and dairy-free. The only thing added to the French Fries other than salt and the oil they are cooked in, is dextrose. A small amount of dextrose is occasionally added at the beginning of the potato season when the potatoes’ natural sugar reserves are low. The dextrose helps the French Fries brown properly.

McDonald’s does still salt the French Fries but it has reduced the amount of salt recently due to changing consumer demands. A medium portion of French Fries now has about 0.7g of salt in it. Recently, unsalted French Fries have been trialled in certain McDonald’s restaurants, and the company will take the results of these trials into consideration. You can always ask for unsalted French Fries to be prepared for you, although this may take a little longer.
