McDonald's is committed to using high-quality ingredients and maintaining industry leading animal welfare standards. For this reason, all of the eggs used in the Breakfast menu and sauces are free-range. These eggs come from 100 UK suppliers. The eggs are cracked open and cooked on the hot grill using a poaching cylinder to give them their shape. Big Breakfast eggs are scrambled in the restaurant from a mixture of 80 percent free-range egg and 20 percent milk. The eggs in the bagel are cooked on the hot grill and folded, again using a liquid free-range egg and milk mixture. You might be interested to know that McDonald's ensures that all its eggs conform to the Lion Mark code of practice and an independently audited free-range Farm Assurance Scheme. Therefore, you can be sure that all the eggs are fresh and tasty, every time.

The eggs are cracked open on to the hot grill within a poaching ring so that they cook in a round shape that works perfectly with the McMuffin bun.

No. McDonald's food contains nothing that should make a healthy person ill or feel sick in any way, unless of course you may have allergen issues. That is something that you should speak to your GP about immediately. All ingredients that are used in producing McDonald's food are similar to those you would buy in the supermarket or use at home to prepare a meal. (June 2007)

All of the ingredients for McDonald’s products are individual and are delivered to each restaurant up to four times per week.
All the products are freshly made in each restaurant every day. For example the Big Mac has seven separate ingredients which are assembled in the kitchens by fully trained staff and managers.

However, I have a question regarding the frying procedures, it has come to my attention that McDonalds does not have a consistent frying procedures in its each franchise. I have a letter from your H/O confirming that separate vats are NOT used to filter the oil at the end of each day, thus the oil used to fry filet 'o' fish, chicken etc is filtereed through the same filter as the fries oil,

When it comes to filtering oil, McDonald’s has two different types of filtering processes - although the company does not maintain a central record of the processes used in each restaurant. One process is self-filtering where oil will not be mixed from one fryer to another. The second filtering process uses the same unit across all fryers but the fryers are filtered in a specific order. So the oil in the French Fries fryer is filtered first, followed by the Veggie Deluxe fryer, the Apple Pies fryer, the chicken fryer and then the Filet-o-Fish fryer. The machine is thoroughly cleaned after every filtering session.

McDonalds pre-prepares a lot of its food so that it can be served to customers quickly. Once sandwiches are prepared, they are kept in a heated area between the front counter and the kitchen to ensure that they remain hot and fresh. They must be sold within ten minutes, otherwise they are disposed of. McDonald's uses a timecard system to help manage this. McDonald's Fries must be sold within five minutes of being cooked, and the salads also have a limited holding time to keep them fresh.
