Happily, you're still totally fine eating McDonald's cheese. As you are aware, traditionally cheese is made by coagulating milk to produce curd. This curd can then be further processed and matured to produce a wide variety of cheeses. Milk is coagulated by the addition of rennet. The active ingredient of rennet is the enzyme, chymosin (also known as rennin).
The traditional source of rennet is from the stomach of young calves. But vegetarian cheeses are manufactured using rennet from either fungal or bacterial sources. In fact the majority of cheeses sold in the UK today are made with vegetarian rennet. And the rennet used to make McDonald's Maasdam cheese slices is vegetarian rennet, not calf rennet.

McDonald's cheese is suitable for any vegetarians who eat dairy products. The cheese in the Toasted Deli Sandwiches is also suitable for vegetarians. However, the cheese used in the Caesar Salad Dressing is not suitable for vegetarians.
