17. I recently went to America and they sell Chicken McNuggets in packs of 4, 6, 10, 20 and 50. How come McDonalds in the UK doesn't sell a pack bigger than 20? I could sure go for 50 nuggets about now.
Firstly apologies for the delay in answering your question, the team has been very busy with all the questions that are pouring in and everybody is working hard to answer them all. Unfortunately this site has been set up to deal primarily with issues in the UK. Regarding your question, some markets have different portion sizes, reflected by the country's different tastes and traditions. 18. Hi, years ago before you used 100% chicken breast is it true that you used all types of chicken meat to make the mc nuggets which caused a problem with the meat going brown so mcdonalds added bull siemen (protein) to keep the meat white?
Firstly apologies for the delay in answering your question, the team has been very busy with all the questions that are pouring in and everybody is working hard to answer them all. No, there is no truth to this. McDonald’s Chicken McNuggets used to be made from dark and white meat. The dark meat consisted of the thighs, skin and drumstick as well as the breast, the same composition as if you were to have a roast chicken for a meal at home. However, after extensive research and feedback from customers, it was clear that the only meat they wanted in McNuggets was breast meat, and McDonald's have been doing so since. The McNuggets have always been prepared in the same way. The meat is carefully cut away from the carcass, marinated, minced and formed into the distinctive nugget shapes. They are then coated in a specially seasoned batter and gently cooked until golden. No additional nasty bits are added to them at any point. If you would like further reassurance, then please take a look at the recent independent Quality Scout report on Chicken McNuggets. Just click on the 'Quality Scout' link on this site to find out more. (Jan 08)

20. If your Chicken Mc Neggets are made of such good chicken, why do you add chicken flavouring and flavour enhancer to them?
Firstly apologies for the delay in answering your question, the team has been very busy with all the questions that are pouring in and everybody is working hard to answer them all. Quality and taste are both vital to McDonald's food, and they complement each other. The flavouring used in Chicken McNuggets is natural and the flavour enhancer (potassium chloride) is used to reduce the amount of salt, and therefore reduce the amount of sodium - making them healthier. Like any other restaurant, McDonald's takes its ingredients and adds seasoning and flavours to really bring out the taste of its food. It is this taste that probably brings two million customers to McDonald's in the UK each day. (Dec 2008)

21. mcdonalds says it dosnt put any preservatives on there paties... well just throwing it out there salt is a type of preservative and my friend that works at mcdonalds says that the chicken nugets are made of 10% corn and the rest are chunks of chicken and he also told me that the regular hamburger patties are made of super procesed beef and fish by- products. Is this true?
Hello and thanks for posting. There are a few myths and untruths that surround McDonald's food, and the Make Up Your Own Mind site was created to help set the record straight, and reassure customers and the public about the quality of McDonald's food. You are right; salt is a type of preservative. However, McDonald's does not use salt as a preservative for its patties. A pinch of salt is used for seasoning and flavour after the patties are cooked, nothing more. The beef patties are made from 100 per cent pure beef. No fillers, binders - or fish. Just beef. Regarding the nuggets, there is corn in their ingredients, used in the batter. McDonald's Chicken McNuggets are made from carefully deboned chicken breast meat, marinaded and coated in a specially seasoned batter. You can find full ingredients information by clicking 'Ingredient List', which is in the 'Eat Smart' section of www.mcdonalds.co.uk. (Dec 2008)

22. Why do you use potassium chloride (a salt) described as "flavour enhancer" in chicken mcnuggets? Isn't this just a dishonest way of trying to hide a very high salt content (so you can measure sodium content, rather than salt and come up with a lower figure)? Describing it a "a healthier alternative to salt" (see your Quality Scout's report) is disingenuous (it is a salt!).
Firstly apologies for the delay in answering your question, the team has been very busy with all the questions that are pouring in and everybody is working hard to answer them all. You are right; potassium chloride is chemically a salt. However the ingredient 'salt' that is listed in ingredient declarations will be sodium chloride, commonly called salt. It is the sodium in salt (sodium chloride) that can be harmful to health if consumed in large quantities. McDonald's UK works closely with the Food Standards Agency and has made many changes over the years to reduce the sodium content in its food in line with their recommendations. As Chicken McNuggets are popular with younger customers it was particularly important to redevelop these to reduce their sodium content. If you remove salt entirely from a McNugget the flavour is very bland and it would no longer be enjoyable. Salt itself is a flavour enhancer, so during research the company looked at ways to enhance the flavour without using salt. Substituting potassium chloride for some of the sodium chloride was found to give the best flavour profile for the McNuggets. The reason McDonald’s label potassium chloride as a flavour enhancer is because that is the legal definition for that type of additive. The Chicken McNuggets are now healthier as they contain less sodium. Further information on reducing sodium in the diet can be found on the Food Standards Agency website www.salt.gov.uk. (Nov 2008)

23. on page 3, question 34 asks "Did people find a chicken head in their Chicken Mcnuggets?" and the first line of the response says "McDonald's UK has not heard of this ever happening in the UK" does this mean that someone found one abroad? if yes, what was done about it?
Firstly apologies for the delay in answering your question, the team has been very busy with all the questions that are pouring in and everybody is working hard to answer them all. This web site was set up to deal with issues relating to McDonald's UK. The UK company has no knowledge of this event abroad, and can state clearly that it did not happen in the UK. (Nov 2008)

24. ive heard that your nuggets are full of anti-foaming agent, and that coke rots your stomach. Is this true?
Firstly apologies for the delay in answering your question, the team has been very busy with all the questions that are pouring in and everybody is working hard to answer them all. McDonald's cola is provided by Coca-Cola, and is the same as the famous drink available everywhere. The only difference is that the cola in McDonald’s restaurants is made with a Coca-Cola syrup, and has carbonated water added to it before serving. McDonald's Chicken McNuggets do not contain anti-foaming agents as an ingredient. They are, however, prepared in the restaurants using a non-hydrogenated vegetable cooking oil that contains very small levels of an anti-foaming agent processing aid. This anti-foaming agent is commonly used in most cooking oils. The level of anti-foaming agent in the cooking oil is less than three parts per million so it is not correct to say that McDonald's Chicken McNuggets are full of anti-foaming agent. McDonald's Chicken McNuggets are made from chicken breast meat, which has been chopped, marinaded and coated with a crispy coating. (Nov 2008)

25. How do you guarantee the quality of the chicken nuggets?. Theres been a lot of bad press over recent years about the reprocessed 'water containing' meat used. As a father of 7 i want to know my children are getting a healthy meal
Sorry it has taken a long time to answer this - the site has been through some changes recently and a few questions slipped through the net. Food quality and safety is of the utmost importance to McDonald’s. The company works closely with suppliers to ensure that the highest food quality and safety procedures are in place. All McDonald’s restaurant staff are trained in food safety and hygiene when they start work. McDonald’s uses the best quality ingredients, produced to the highest standards. McDonald's Chicken McNuggets are made from carefully deboned chicken breast meat, which is chopped, marinaded and coated in a specially seasoned batter. The full ingredients list for the Chicken McNuggets is available in the 'Our Food' booklet, which is available for download in the 'Eat Smart' section of www.mcdonalds.co.uk under 'Ingredients list'. You can also view Quality Scout reports on this site. (Nov 2008)

The flavouring used in the Chicken McNuggets is a naturally derived mild chicken flavour with a hint of black pepper and celery. (Nov 2008)

27. Would you consider making chicken burgers and/or nuggets that contained no dairy products? I am allergic to all dairy products and so cannot eat the chicken nuggets or the chicken sandwich.
Firstly apologies for the delay in answering your question, the team has been very busy with all the questions that are pouring in and everybody is working hard to answer them all. Unfortunately McDonald’s currently has no plans to alter the ingredients for the McChicken burgers and Chicken McNuggets. However, food allergy is a subject that McDonald's takes very seriously and appreciates how difficult it can be for you to find suitable food to meet your diet. There are other items on the McDonald’s menu apart from the Chicken McNuggets and McChicken burger that are dairy free, such as the Chicken Selects (with Sweet Chilli Dip or Smokey BBQ Dip), Hamburger (which you can have prepared without mustard), French Fries, Fish Fingers, Fruit Bags and the Garden Side Salad (with Balsamic Dressing). If you would like a full nutritional breakdown of all McDonald’s food items, including full allergen details, you can find it at www.mcdonaldsmenu.info. You can also find information regarding the ingredients of all McDonald’s products in the ‘Ingredients List’, found in the ‘Eat Smart’ section of www.mcdonalds.co.uk.

28. how do you make chicken nuggets? and what is the maximum amount of chicken meat you use? and what are the portion sizes? many thanks,Natasha
McDonald’s Chicken McNuggets are made from carefully deboned chicken breast meat that is formed then coated in a specially seasoned batter. The chicken meat is delivered to the factory where it will be minced and stock added before being shaped into the four iconic shapes that make up Chicken McNuggets. Once they reach the restaurant, Chicken McNuggets are served in portions of four (approx 70g), six (approx 105g) and nine (approx 157g) pieces. They comprise of about 45 percent chicken, with the rest being coating. For a more thorough insight to McDonald's Chicken McNuggets, check out the Quality Scouts page on this site, and click on 'Charlotte Haile'. Charlotte is an Independent Quality Scout who went behind the scenes to find out the exact process of how McDonald's Chicken McNuggets are made. You can read and watch her interviews and reports, and you may get some tips on making your own nuggets.

30. When did you start using only white breast meat in your chicken nuggets
McDonald's apologises for the late reply to your question. There has been a lot of activity recently with questions being posted to the site and the team are working hard to answer all questions as quickly as possible, so thank you for your patience. In answer to your question, when customers said they wanted nothing but breast meat to be used in the Chicken McNuggets, the company listened. So in 2004 McDonald's started preparing its McNuggets with only breast meat. From January 2006, the skin was removed from the meat as well. (September 2008)
